Cheesy Tomatoes (Week 3, now Week 6)

Well, here they finally are. Cheesy Baked Tomatoes. And I actually liked them! I usually despise tomatoes unless they are in the form of a pasta sauce of some kind or very well hidden in other foods. However, even I have to admit that these were pretty good. The fact that they were smothered in cheese helps, too... We all know I love cheese!



The recipe is simple. Slice tomatoes (they say to slice them in half, I sliced them in four to make them thinner because I don't really like tomato). Load with parmesan and provolone cheese (well, they don't use the word "load" and I used an Italiano blend instead because I can never find the proper cheese at my grocery store!). Sprinkle with oregano, basil, salt, and pepper.



 Stick in the oven for 15 minutes at 450F. I only left them in for 10 minutes because they were cut quite thinly and so cooked faster.

I served mine with some poached chicken. It was a perfect lunch and I felt super good about eating it.




It is a Weight Watchers recipe, worth 1 point. Of course, they use reduced-fat cheese. So mine probably weren't just one point. Oh well. I'm pregnant, and baby boy needs the extra points! :D My excuse and I'm sticking to it.
