I am sorry for the delay. With so little energy lately, finding the motivation to keep up with these projects and recipes is getting a tad difficult. It will definitely be interesting to see how well I do the closer it comes to the little one's arrival and especially after he is here. It will be hard, but I am going to keep trying and hopefully I will get them all done (just maybe not during the week I am supposed to).
Anyway, here is this week's recipe. As I explained in my update of the master list, I cannot share this week's project right now because it is a gift for someone. That will have to wait until it has been received. As soon as I know it has been received, I will post the pictures and what not. In the meantime, the recipe will have to suffice.
This week's recipe was Country Club Chicken, which is another casserole dish made with Campbell's soup.
Ingredients:
1 pound spaghetti
4 chicken breasts
1 large onion
7 oz mushrooms
1 can concentrated cream of mushroom soup
(1 Unox or 2 Campbell’s)
4 or 5 slices bacon
1/4 cup dry white wine
2/3 cup sharp cheddar
1 apple
butter or oil
salt & pepper
Directions
Preheat oven to 350F.
Mince onion. (I have to admit that I had Mum do this as I am a big wuss when it comes to onions). Clean and Slice the mushrooms (I just bought pre-sliced ones... I'm lazy). Peel and mince the apple.
Season the chicken breasts with salt and pepper.
Cook the bacon (make it crispy).
In the same pan, add butter and brown the chicken breasts. When browned on each side, put in a casserole dish. Still using the same pan, cook up the onion (1-3 minutes), then add the mushrooms (another 1-3 minutes), and then the apple.
Cook all together for 3-4 minutes. Season with salt and pepper, crumble in the bacon. Pour in wine (I substituted with chicken broth). Add soup and cheese (I used a cup... I like cheese!).
When it is all well-mixed and heated, pour the sauce over the chicken breasts in the casserole dish. Cook in the oven for 25-30 minutes.
Cook the spaghetti according to directions on package while the chicken is cooking.
Ladle chicken and sauce on top of spaghetti and garnish with bacon (Erik's favourite part, I think...).
Yummy. This was a very good recipe. I think it is safe to say we all enjoyed it very much! I can see myself making it again. The blog it came from says it well. "It's the ultimate stick-to-your-ribs comfort food." Very hearty and filling. A good meal for as cold a day as today was.
I will say that the recipe was not very specific or descriptive. I had to guess what temperatures to use for the stove top cooking (I stayed at a medium to a medium-low heat). I felt like I improvised a lot. But it was an easy enough recipe that I could improvise and not completely screw it up.
